Ingredients (1–2 servings)
- 1 cup fresh strawberries, sliced
- ½ cup plain Greek yogurt (unsweetened, low-fat or full-fat)
- ½ tsp vanilla extract
- Sweetener to taste (stevia or monk fruit)
- Optional toppings:
- Chopped almonds or walnuts
- Chia seeds
- A sprinkle of cinnamon
Instructions
- Lightly mash half of the strawberries with a fork.
- Mix mashed strawberries with yogurt, vanilla, and sweetener.
- Fold in remaining sliced strawberries.
- Chill 10 minutes or eat immediately.
- Add nuts or seeds on top if desired.
Quick Strawberry Chia Pudding (Extra Fiber)
Mix &f:
- ½ cup unsweetened almond milk
- 1½ tbsp chia seeds
- ½ cup chopped strawberries
- Stevia to taste
Refrigerate 2–4 hours → thick, pudding-like, great for blood sugar control.
