  1. Prepare the crust:
    Combine almond flour, coconut flour, flaxseed, sweetener, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.

  3. Chill:
    Form the dough into a ball, divide it into two portions, wrap, and refrigerate for 30–45 minutes.

    Add sliced peaches to a bowl with lemon juice, sweetener, chia seeds, cornstarch, cinnamon, nutmeg, vanilla, and salt. Toss gently and let sit for about 10 minutes.

    Press one portion of dough into a 9-inch pie pan, covering the bottom and sides. Pour in the peach filling.
  6. Create the lattice:
    Roll out the remaining dough between two sheets of parchment paper. Cut it into strips and arrange them over the peaches in a lattice pattern.
  7. Egg wash:
    Whisk the egg with 1 teaspoon water and lightly brush it over the crust. Sprinkle with sliced almonds if desired.
