Crispy Breakfast Flautas


  • 8 small flour tortillas
  • 1 cup cooked and shredded potatoes
  • 1 cup cooked and crumbled breakfast sausage
  • 1 cup shredded cheddar cheese
  • 4 large eggs, scrambled
  • 1/4 cup diced green onions
  • Salt and pepper to taste
  • Cooking oil for frying
  • Optional toppings: salsa, sour cream, guacamole


  1. In a large skillet, cook the breakfast sausage until browned and crumbled. Remove excess grease.
  2. Add the cooked and shredded potatoes to the skillet with the sausage. Season with salt and pepper to taste. Cook until the potatoes are golden brown.
  3. Push the sausage and potato mixture to one side of the skillet and add the scrambled eggs to the other side. Cook the eggs until they are just set, then combine them with the sausage and potatoes.
  4. Stir in the diced green onions and shredded cheddar cheese. Cook for an additional 2-3 minutes until the cheese is melted and everything is well combined. Remove the skillet from heat.
  5. Heat the tortillas in a dry skillet or microwave for about 20 seconds to make them pliable.
  6. Spoon a portion of the filling onto each tortilla and roll them tightly into flautas. Use toothpicks to secure if needed.
  7. In a separate skillet, heat about 1 inch of cooking oil over medium-high heat.
  8. Carefully place the flautas in the hot oil, seam side down. Fry until they are golden brown and crispy on all sides.
  9. Remove the flautas from the oil and place them on a paper towel-lined plate to drain any excess oil.
  10. Serve the crispy breakfast flautas with your favorite toppings such as salsa, sour cream, or guacamole.
