Ingredients

  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/3 cup sugar
  • 2 tbsp cornstarch
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 1/3 cup creamy peanut butter
  • 1 1/2 cups mini vanilla wafers or small round cookies
  • 1 medium banana, sliced (optional)

Instructions

  1. Prepare the pudding mixture: In a saucepan, whisk together the milk, sugar, cornstarch, and egg yolks until smooth.
  2. Cook until thickened: Heat over medium-low heat, stirring constantly, for 8–10 minutes until the mixture becomes thick and creamy.
  3. Add flavor: Remove from the heat and stir in the peanut butter and vanilla extract until smooth.
  4. Add the cream: Let the pudding cool slightly, then gently fold in the heavy cream.
  5. Add the wafers: Stir in the mini vanilla wafers and banana slices, if using.
  6. Chill: Transfer to a serving bowl, cover, and refrigerate for at least 2 hours until cold and set.
  7. Serve: Stir gently before serving and add a few extra wafers on top for decoration.

Tips

  • For a richer flavor, use creamy peanut butter.
  • Add banana slices just before serving if you prefer them fresh.
  • Keep refrigerated in an airtight container and enjoy within 3 days.
