Ingredients

  • 1 cup cream cheese, softened
  • ½ cup sweetened condensed milk
  • ¼ cup fresh lime juice
  • 1 tsp lime zest
  • ½ cup whipping cream
  • 6–8 plain biscuits, crushed
  • 1 tbsp melted butter
  • Optional: 1 tbsp sugar

Method

  1. Make the base: Mix crushed biscuits with melted butter. Put 1–2 tbsp into each cup.
  2. Make filling: Beat cream cheese until smooth. Add condensed milk, lime juice and zest; mix until creamy.
  3. Add cream: Whip the cream until fluffy, then gently fold it into the lime mixture.
  4. Fill cups: Spoon the mixture over the biscuit base and smooth the tops.
  5. Chill: Refrigerate for 3–4 hours, preferably overnight.
  6. Decorate: Top with biscuit crumbs and a little lime zest.

Tip: For a firmer, cheesecake-like texture, chill overnight. Keep refrigerated.
