Ingredients
For the Chocolate Mousse:
- 1Β½ cups plain Greek yogurt, preferably thick/full-fat or 2%
- Β½ cup unsweetened cocoa powder
- 2β3 tablespoons honey, maple syrup, or your preferred sweetener
- 1 teaspoon pure vanilla extract
- Β½ cup milk of choice
- 60 g dark chocolate, preferably 70% cocoa
- 1 scoop chocolate or vanilla protein powder
- 1 tablespoon natural peanut butter or almond butter
- ΒΌ teaspoon salt
For the Topping:
- 1β2 tablespoons dark chocolate shavings
- A light dusting of unsweetened cocoa powder
- A few chocolate curls, optional
- Fresh strawberries or raspberries, optional
π©βπ³ Instructions
1. Melt the Chocolate
Break the dark chocolate into small pieces and place it in a microwave-safe bowl. Heat in 15β20 second intervals, stirring between each interval, until completely smooth. Allow it to cool slightly so it isn’t hot when added to the yogurt.
2. Prepare the Chocolate Base
Add the Greek yogurt, cocoa powder, protein powder, sweetener, vanilla extract, peanut or almond butter, salt, and milk to a blender or food processor.
Blend for about 30β60 seconds, until the mixture becomes completely smooth and creamy.
3. Add the Melted Chocolate
Pour the slightly cooled melted chocolate into the mixture. Blend again until everything is thoroughly incorporated.
The mixture should be thick, glossy, and smooth. If it seems too thick, add another tablespoon or two of milk.
4. Taste and Adjust
Taste the mousse before chilling. Add a little more sweetener if you prefer a sweeter dessert, or add another small amount of cocoa powder for a deeper chocolate flavor.
For a more intense chocolate taste, you can also add a tiny pinch of espresso powder.
5. Chill the Mousse
Divide the chocolate mixture between 4 small dessert glasses or ramekins.
Cover and refrigerate for at least 2 hours. Chilling allows the mousse to become thicker and gives the chocolate flavor time to develop.
For the best texture, refrigerate it for 3β4 hours.
6. Make It Airier
For a lighter, more mousse-like texture, gently fold in a small amount of whipped Greek yogurt or lightly whipped cream after blending rather than blending everything together.
7. Garnish
Just before serving, sprinkle the top with dark chocolate shavings or cocoa powder. Add a few chocolate curls and fresh berries if desired.
π« Serving
Serve the mousse cold and straight from the refrigerator. The texture should be thick, creamy, smooth, and spoonable, similar to a traditional chocolate mousse.
π‘ Tips for the Best Chocolate Mousse
- Use thick Greek yogurt for the creamiest consistency.
- Choose good-quality unsweetened cocoa powder for a stronger chocolate flavor.
- Dark chocolate with 70% cocoa or higher works especially well.
- If using sweetened protein powder, reduce the added honey or sweetener.
- Don’t add hot melted chocolate directly to the yogurt because it can affect the texture.
- For an even richer dessert, add 1 tablespoon of almond or peanut butter.
- For a lower-sugar version, use a suitable zero-sugar sweetener instead of honey or maple syrup.
- Let the mousse chill properly before serving; it becomes noticeably thicker as it cools.
π§ Storage
Keep covered in the refrigerator for up to 3 days. Store the chocolate toppings separately if possible so they remain crisp.
