Ingredients:

  • 4–5 medium cucumbers (thinly sliced)
  • 1 cup sour cream (or Greek yogurt)
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 6–8 strips cooked bacon (crispy, chopped)
  • 2 tablespoons fresh dill (or 1 tsp dried dill)
  • 2 tablespoons chopped green onions
  • 1 tablespoon lemon juice or vinegar
  • 1 teaspoon garlic powder (or 1 fresh garlic clove, minced)
  • Salt and black pepper (to taste)

  1. Prepare cucumbers:
    • Wash and thinly slice the cucumbers.
    • Optional: Sprinkle a little salt and let them sit for 10 minutes, then drain excess water (keeps salad from getting watery).
  2. Make dressing:
    • In a large bowl, mix:
      • Sour cream
      • Mayonnaise
      • Lemon juice/vinegar
      • Garlic
      • Dill
      • Salt & pepper
  3. Combine:
    • Add sliced cucumbers into the dressing.
    • Mix gently until well coated.
  4. Add toppings:
    • Stir in shredded cheese and green onions.
    • Sprinkle crispy bacon on top (or mix some inside).
  5. Chill:
    • Refrigerate for at least 30 minutes before serving for best flavor.

  • Use Greek yogurt instead of sour cream for a lighter version.
