Ingredients
Cake
- 1½ cups (190g) all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- ½ cup (115g) butter, softened
- ¾ cup (150g) sugar
- 2 eggs
- 1 tsp vanilla
- ½ cup (120ml) milk
- 1 cup fresh/frozen cranberries
- ½ cup white chocolate chips
Cream filling
- 4 oz (115g) cream cheese, softened
- ¼ cup (30g) powdered sugar
- ½ tsp vanilla
- ½ cup white chocolate chips
Glaze
- ½ cup white chocolate
- 1–2 tbsp milk or cream
Method
- Heat oven to 175°C/350°F. Grease and line a loaf pan.
- Whisk flour, baking powder and salt.
- Beat butter and sugar until fluffy. Beat in eggs and vanilla.
- Mix in the dry ingredients alternately with milk. Fold in cranberries and white chocolate.
- Beat cream cheese, powdered sugar and vanilla until smooth.
- Pour ½ the batter into the pan. Add the cream-cheese mixture down the center, then cover with remaining batter.
- Bake 50–60 minutes, until a toothpick comes out mostly clean. Cool completely.
- Melt white chocolate with milk/cream and drizzle over the loaf.
- Let the glaze set, then slice.
Tip: Toss the cranberries in 1 tsp flour before folding them in—they’ll stay distributed instead of sinking.
