  • 2 cups almond flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated erythritol (or your preferred keto-friendly sweetener)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 cup sugar-free chocolate chips

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and erythritol until smooth.
  3. Add the vanilla extract and egg to the butter mixture, and mix until well combined.
  4. In a separate bowl, whisk together the almond flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing well to form a cookie dough.
  6. Fold in the sugar-free chocolate chips until evenly distributed throughout the dough.
  7. Using a cookie scoop or your hands, form the dough into evenly sized balls and place them on the prepared baking sheet, leaving enough space between each cookie.
  8. Flatten each cookie slightly with the back of a spoon or your fingertips.
  9. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown. Keep in mind that almond flour cookies may be softer when warm but will firm up as they cool.
  10. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
