Ingredients

  • 1 cup cooked white rice
  • 150 g ground beef
  • ½ cup shredded cheddar cheese
  • ½ cup shredded mozzarella
  • 1 egg
  • 2 tbsp milk
  • 1 tbsp melted butter
  • 1 tbsp chopped parsley
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp paprika
  • ¼ tsp black pepper
  • ½ tsp salt

Method

  1. Cook the beef: Brown the ground beef in a skillet until fully cooked. Drain excess fat and let it cool slightly.
  2. Make the mixture: In a bowl, combine cooked rice, beef, ¼ cup cheddar, mozzarella, egg, milk, melted butter, parsley and all seasonings.
  3. Prepare the pan: Grease 6–8 muffin cups very well.
  4. Fill: Divide the mixture between the cups, pressing it down firmly so the cakes hold together. Don’t overfill.
  5. Cheese topping: Sprinkle the remaining cheddar over each one.
  6. Bake: Bake at 200°C / 400°F for 20–25 minutes, until golden brown and crispy around the edges.
  7. Cool: Let them sit for 5 minutes before removing from the muffin pan.
  8. Serve: Garnish with fresh parsley and serve hot.

For the final 2–3 minutes, turn the oven to broil/grill and watch closely until the cheese becomes golden and bubbly.

Tip: Cold, cooked rice works especially well because it makes the mixture firm enough to hold its muffin shape.
