Description:
These Vegan Cauliflower Gyros are a delicious and healthy twist on the classic Greek dish. Made with roasted cauliflower, flavorful spices, and served in warm pita bread with fresh veggies and a creamy vegan tzatziki sauce, these gyros are sure to be a hit!
Ingredients:
- 1 medium head cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- 4-6 whole wheat or gluten-free pitas
- Sliced red onion, sliced tomatoes, and shredded lettuce, for serving
- Vegan tzatziki sauce (see below)
Instructions:
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the cauliflower florets, olive oil, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper. Toss until the cauliflower is evenly coated.
- Spread the cauliflower in a single layer on the prepared baking sheet. Roast in the preheated oven for 20-25 minutes, or until tender and lightly browned, stirring halfway through cooking.
- While the cauliflower is roasting, warm the pitas according to package instructions.
- To assemble the gyros, spread a spoonful of vegan tzatziki sauce on each pita. Top with roasted cauliflower, sliced red onion, tomatoes, and lettuce. Roll up the pitas and serve immediately.
Vegan Tzatziki Sauce:
- 1 cup vegan plain yogurt
- 1/2 cucumber, grated and excess water squeezed out
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh dill (or 1 teaspoon dried dill)
- Salt and pepper, to taste
Combine all ingredients in a bowl and mix well. Adjust seasoning to taste. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
