Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon (optional, for extra flavor)
  • ½ cup unsalted butter (softened)
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 ripe bananas (mashed)
  • ½ cup sour cream or yogurt
  • ½ cup milk

For the Cream Cheese Frosting:

  • 8 oz (225g) cream cheese (softened)
  • ¼ cup unsalted butter (softened)
  • 2–3 cups powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt

For Topping:

  • ½ cup chopped walnuts or pecans

👩‍🍳 Instructions

Step 1: Prepare the Oven & Pan

  • Preheat oven to 180°C (350°F)
  • Grease and line a baking pan (9×13 inch recommended)

Step 2: Mix Dry Ingredients

  • In a bowl, whisk together:
    • Flour
    • Baking soda
    • Salt
    • Cinnamon

Set aside.


Step 3: Make the Batter

  • In another bowl:
    • Beat butter + white sugar + brown sugar until light and fluffy
  • Add eggs one at a time, mixing well
  • Add vanilla extract
  • Mix in mashed bananas

Step 4: Combine Everything

  • Add dry ingredients gradually
  • Add sour cream and milk
  • Mix until smooth (do NOT overmix)

Step 5: Bake

  • Pour batter into prepared pan
  • Bake for 30–40 minutes
  • Check with toothpick (should come out clean)
  • Let cake cool completely

🎂 Make the Frosting

  • Beat cream cheese + butter until smooth
  • Add powdered sugar gradually
  • Add vanilla + pinch of salt
  • Beat until creamy and fluffy

🍰 Assemble

  • Spread frosting evenly over cooled cake
  • Sprinkle chopped nuts on top
