Ingredients

For the filling

  • 1 lb (450 g) ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables
  • 1 cup corn
  • 1 tbsp tomato paste
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil

For the mashed potato topping

  • 2 lbs (900 g) potatoes, peeled and cubed
  • 3 tbsp butter
  • ½ cup milk
  • ½ cup shredded cheddar cheese
  • Salt and black pepper, to taste

Instructions

  1. Make the potatoes: Boil potatoes in salted water for 15–20 minutes, until tender. Drain and mash with butter, milk, salt, and pepper. Stir in half the cheese.
  2. Cook the filling: Heat oil in a skillet. Sauté onion for 3–4 minutes, then add garlic and ground beef. Cook until browned.
  3. Add tomato paste, Worcestershire sauce, thyme, paprika, salt, and pepper. Stir in beef broth and vegetables. Simmer for 8–10 minutes, until slightly thickened.
  4. Assemble: Transfer the beef mixture to a baking dish. Spread mashed potatoes evenly over the top and sprinkle with remaining cheddar.
  5. Bake: Bake at 400°F (200°C) for 20–25 minutes, then broil for 2–3 minutes until the top is golden and lightly crisp.
  6. Rest: Let stand for 5–10 minutes before serving.
