Ingredients
For the filling
- 1 lb (450 g) ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup frozen mixed vegetables
- 1 cup corn
- 1 tbsp tomato paste
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- ½ tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil
For the mashed potato topping
- 2 lbs (900 g) potatoes, peeled and cubed
- 3 tbsp butter
- ½ cup milk
- ½ cup shredded cheddar cheese
- Salt and black pepper, to taste
Instructions
- Make the potatoes: Boil potatoes in salted water for 15–20 minutes, until tender. Drain and mash with butter, milk, salt, and pepper. Stir in half the cheese.
- Cook the filling: Heat oil in a skillet. Sauté onion for 3–4 minutes, then add garlic and ground beef. Cook until browned.
- Add tomato paste, Worcestershire sauce, thyme, paprika, salt, and pepper. Stir in beef broth and vegetables. Simmer for 8–10 minutes, until slightly thickened.
- Assemble: Transfer the beef mixture to a baking dish. Spread mashed potatoes evenly over the top and sprinkle with remaining cheddar.
- Bake: Bake at 400°F (200°C) for 20–25 minutes, then broil for 2–3 minutes until the top is golden and lightly crisp.
- Rest: Let stand for 5–10 minutes before serving.
