Ingredients

For the Vegetable Patties:

  • 2 medium potatoes, boiled and mashed
  • 1 cup finely chopped cauliflower
  • ½ cup grated carrot
  • ½ cup sweet corn
  • ¼ cup green peas
  • ½ small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp salt, or to taste
  • ½ cup breadcrumbs
  • 2 tbsp grated Parmesan cheese, optional
  • 1 egg
  • 2 tbsp fresh parsley or coriander, chopped

For the Crispy Coating:

  • 1 cup breadcrumbs or panko
  • ½ tsp paprika
  • ¼ tsp black pepper
  • ¼ tsp salt
  • 1 egg, beaten
  • 2 tbsp flour

For the Creamy Garlic Dip:

  • ½ cup mayonnaise
  • ¼ cup Greek yogurt
  • 1 garlic clove, finely minced
  • 1 tsp lemon juice
  • ½ tsp black pepper
  • ¼ tsp salt
  • ½ tsp dried parsley
  • ½ tsp garlic powder

Instructions

1. Prepare the vegetables
Boil the potatoes until fork-tender, then drain and mash them. Steam or lightly cook the cauliflower, peas, carrots, and corn until tender. Make sure the vegetables are not watery.

2. Make the mixture
In a large bowl, combine the mashed potatoes, cooked vegetables, onion, garlic, parsley or coriander, breadcrumbs, Parmesan, egg, salt, black pepper, paprika, garlic powder, and oregano.

Mix everything thoroughly until you have a firm mixture that can easily hold its shape. If it feels too soft, add another 1–2 tablespoons of breadcrumbs.

3. Shape the patties
Take a portion of the mixture and form it into a round, thick patty. Repeat until all the mixture is used.

4. Coat the patties
Prepare three bowls: one with flour, one with beaten egg, and one with seasoned breadcrumbs.

Dip each patty lightly into the flour, then the egg, and finally coat generously with breadcrumbs.

5. Cook until golden

Pan-frying:
Heat 2–3 tablespoons of oil in a skillet over medium heat. Cook the patties for about 3–4 minutes per side, until crisp and golden brown. Transfer to a paper towel-lined plate.

Air fryer:
Spray the patties lightly with oil and air-fry at 200°C (400°F) for 12–16 minutes, turning halfway through.

Oven:
Place the patties on a lined baking sheet, spray lightly with oil, and bake at 200°C (400°F) for 20–25 minutes, flipping halfway through.
