- 4 medium fresh cucumbers, thinly sliced
- ½ small red onion, thinly sliced
- 1 small carrot, finely diced
- ¼ cup fresh parsley or cilantro, chopped
- ½ cup white vinegar or apple cider vinegar
- ¼ cup water
- 1 tablespoon lemon juice
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic, finely minced
- ½ teaspoon dried oregano
- ½ teaspoon red chili flakes, optional
- 1 teaspoon honey or sugar, optional
- 1 tablespoon olive oil
Instructions
- Prepare the vegetables: Wash the cucumbers and slice them into thin rounds. Thinly slice the red onion and finely dice the carrot.
- Make the dressing: In a bowl, whisk together the vinegar, water, lemon juice, salt, black pepper, minced garlic, oregano, chili flakes, and honey or sugar if using.
- Combine: Add the cucumber, red onion, carrot, and chopped parsley or cilantro to a large bowl.
- Add the dressing: Pour the vinegar mixture over the vegetables and gently toss until everything is evenly coated.
- Add olive oil: Drizzle in the olive oil and toss again.
- Marinate: Cover and refrigerate for 30–60 minutes so the cucumbers absorb the flavors.
- Serve: Give the salad another gentle toss before serving. Serve chilled as a refreshing side dish with grilled chicken, fish, sandwiches, or rice.
