Ingredients

For the Potatoes

  • 2 lb (900 g) baby potatoes
  • 3 tablespoons olive oil
  • 2 tablespoons melted butter
  • 4 cloves garlic, finely minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon onion powder

For the Caramelized Onions

  • 2 large yellow onions, thinly sliced
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon brown sugar, optional
  • 1 teaspoon Worcestershire sauce, optional

For Finishing

  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, optional
  • A little extra melted butter
  • Freshly cracked black pepper

👩‍🍳 Instructions

1. Prepare the Potatoes

Wash the baby potatoes thoroughly and remove any damaged areas.

Cut larger potatoes in half or into thick slices. Smaller potatoes can remain whole.

Place them in a large bowl and add the olive oil, melted butter, minced garlic, salt, black pepper, paprika, garlic powder, thyme, oregano, and onion powder.

Toss thoroughly until every piece is evenly coated.

2. Roast the Potatoes

Preheat your oven to 425°F (220°C).

Spread the potatoes in a single layer on a large baking sheet.

Place the cut sides down whenever possible. This helps create a beautifully browned, crispy surface.

Roast for approximately 35–45 minutes, turning the potatoes halfway through cooking.

They should become deeply golden and crisp around the edges while remaining fluffy and tender inside.

3. Caramelize the Onions

While the potatoes are roasting, heat 1 tablespoon butter and 1 tablespoon olive oil in a large skillet over medium-low heat.

Add the sliced onions and sprinkle with salt.

Cook slowly for approximately 20–30 minutes, stirring occasionally.

The onions will gradually become soft, golden, glossy, and naturally sweet.

For a deeper caramelized flavor, add brown sugar during the final few minutes.

If desired, add Worcestershire sauce for an extra savory depth.

4. Combine Everything

When the potatoes are beautifully roasted, transfer them to a large serving bowl.

Add the caramelized onions.

Gently toss everything together so the sweet onions coat the crispy potatoes without breaking them apart.

Add another small spoonful of melted butter if you want an especially rich finish.

5. Finish with Fresh Herbs

Sprinkle generously with fresh parsley and chives.

Add freshly cracked black pepper.

Serve immediately while the potatoes are hot, crispy, buttery, and fragrant.

⭐ Extra-Crispy Tips

  • Dry the potatoes thoroughly before seasoning.
  • Don’t overcrowd the baking sheet.
  • Leave space between the potatoes so they roast instead of steam.
  • Place cut sides directly against the hot pan.
  • Use a fully preheated oven.
  • For even crispier potatoes, parboil them for 6–8 minutes before roasting.
  • Don’t add the caramelized onions until the potatoes are nearly finished so the onions don’t burn.
