Ingredients (makes 8–10 pops):

For the “Banana” Filling:

4 oz full-fat cream cheese, softened

2 tbsp powdered erythritol or monk fruit sweetener

1 tsp vanilla extract

Pinch of salt

Optional: 1 tbsp unsweetened shredded coconut or almond flour for texture

For the Coating:

6 oz sugar-free dark chocolate chips or bars (Lily’s, ChocZero, or homemade)

1 tsp coconut oil or butter (for smooth melting)

½ cup finely chopped almonds, peanuts, or pecans (toasted for extra flavor)

For Assembly:

Wooden popsicle sticks or skewers

Parchment paper or silicone mat

Optional: pinch flaky sea salt or cinnamon sprinkle after dipping

Instructions:

Make the filling: In small bowl, beat cream cheese, sweetener, vanilla, and salt until smooth and fluffy. If too soft, chill 15 mins. Roll into 1-inch balls or oval shapes (like mini bananas). Place on parchment-lined tray. Freeze 30+ minutes until firm.

Prep coating station: Melt chocolate with coconut oil/butter in microwave-safe bowl in 30-second bursts, stirring between each, until smooth. Pour chopped nuts into shallow dish.

Dip & roll: Remove frozen “bananas” from freezer. Insert stick into bottom of each. Dip fully into melted chocolate, letting excess drip off. Immediately roll in chopped nuts to coat evenly. Return to parchment.

Set & serve: Freeze 15–20 minutes until chocolate is hard. For best results, store in freezer until ready to eat. Sprinkle with sea salt or cinnamon if desired before serving.

Eat straight from freezer. Let sit 2–3 mins if too hard. Watch faces light up when they realize it’s keto.

Pro Tips:

→ Want richer flavor? Add 1 tbsp cocoa powder to cream cheese filling for chocolate-banana vibe.

→ Swap nuts: Try crushed pistachios, macadamia pieces, or even cacao nibs for crunch.

→ Make ahead? These keep frozen for 2 weeks — perfect for grab-and-go treats.

→ Vegan option? Use plant-based cream cheese + vegan chocolate + maple-flavored stevia.

→ Elevate presentation: Serve in speckled ceramic bowl like shown, drizzle with sugar-free caramel or berry coulis for fancy flair.

→ No sticks? Skip them — make truffle-style bites instead. Still delicious.
