Ingredients:

For the Batter:

  • 1 cup unsweetened  applesauce
  • 2 cups  sugar
  • 1/2 cup vegetable oil
  • 2 tablespoons ground flaxseeds mixed with 6 tablespoons warm water (as an egg substitute)
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

For the Cinnamon Sugar Mixture:

  • 2/3 cup sugar
  • 2 teaspoons ground cinnamon

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease two 9×5-inch (23×13 cm) loaf pans or line them with parchment paper.
  2. Make the Flax  Eggs: In a small bowl, combine the ground flaxseeds and warm water. Let it sit for a few minutes until it becomes thick and gel-like, resembling the consistency of  eggs.
  3. Prepare the Batter: In a large mixing bowl, combine the applesauce, sugar, vegetable oil, flaxseed mixture (your egg substitute), and vanilla extract. Mix until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.
  6. Prepare Cinnamon Sugar Mixture: In a small bowl, mix together the sugar and ground cinnamon for the cinnamon sugar mixture.
  7. Layer Batter and Cinnamon Sugar: Pour a small amount of the batter into each of the prepared loaf pans, just enough to cover the bottom. Sprinkle about 1/4 of the cinnamon sugar mixture over the batter in each pan. Then, add the remaining batter to each pan and top with the remaining cinnamon sugar mixture. You can use a knife or a skewer to gently swirl the cinnamon sugar into the batter.
  8. Bake: Place the pans in the preheated oven and bake for about 45-50 minutes or until a toothpick or cake tester inserted into the center comes out clean.
  9. Cool and Serve: Allow the bread to cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely. Once cooled, slice and enjoy your vegan Amish Cinnamon Bread!
