Tater Tot Casserole Breakfast
Ingredients:
- 1 pound ground breakfast sausage
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cups shredded cheddar cheese
- 1 cup milk
- 6 large eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried thyme
- 1 bag (32 oz) frozen tater tots
- Optional toppings: diced green onions, salsa, sour cream
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground breakfast sausage over medium heat until browned. Add diced onion and bell pepper, and cook until the vegetables are softened. Drain excess grease.
- In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, onion powder, and dried thyme.
- In a greased 9×13-inch baking dish, spread the cooked sausage and vegetable mixture evenly.
- Pour the egg mixture over the sausage and vegetables.
- Sprinkle shredded cheddar cheese over the top.
- Arrange the frozen tater tots in a single layer on top of the cheese.
- Bake in the preheated oven for 35-40 minutes or until the eggs are set, and the tater tots are golden brown.
- Remove from the oven and let it cool for a few minutes before serving.
- Garnish with optional toppings like diced green onions, salsa, or sour cream.
