Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup chopped spinach
  • 1 cup chopped canned artichoke hearts, drained
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup mayonnaise
  • 2 cloves garlic, minced
  • Salt and pepper
  • Olive oil

Instructions:

  1. Preheat oven to 375°F.
  2. In a mixing bowl, combine chopped spinach, chopped artichoke hearts, shredded mozzarella cheese, grated Parmesan cheese, mayonnaise, minced garlic, and salt and pepper to taste.
  3. Cut a pocket into each chicken breast by making a horizontal slit along one side, being careful not to cut all the way through.
  4. Stuff each chicken breast with 1/4 of the spinach artichoke mixture.
  5. Heat some olive oil in a large skillet over medium-high heat. Sear the stuffed chicken breasts on both sides until golden brown, about 3-4 minutes per side.
  6. Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, until the chicken is cooked through and no longer pink in the center.
  7. Serve hot and enjoy!
