Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup chopped spinach
- 1 cup chopped canned artichoke hearts, drained
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup mayonnaise
- 2 cloves garlic, minced
- Salt and pepper
- Olive oil

Instructions:
- Preheat oven to 375°F.
- In a mixing bowl, combine chopped spinach, chopped artichoke hearts, shredded mozzarella cheese, grated Parmesan cheese, mayonnaise, minced garlic, and salt and pepper to taste.
- Cut a pocket into each chicken breast by making a horizontal slit along one side, being careful not to cut all the way through.
- Stuff each chicken breast with 1/4 of the spinach artichoke mixture.
- Heat some olive oil in a large skillet over medium-high heat. Sear the stuffed chicken breasts on both sides until golden brown, about 3-4 minutes per side.
- Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, until the chicken is cooked through and no longer pink in the center.
- Serve hot and enjoy!
