1. Ingredients
    • 2 cups (250 g) all-purpose flour
    • ¼ cup (50 g) sugar
    • 2 tsp baking powder
    • ½ tsp salt
    • ½ cup (115 g) cold butter, cubed
    • ¾ cup (180 ml) milk
    • 1 tsp vanilla
    • ¾ cup (100 g) raisins
    • 1 egg, for brushing
    Method
    1. Heat oven to 200°C/400°F. Line a baking tray.
    2. Mix flour, sugar, baking powder, and salt.
    3. Rub in the cold butter until the mixture looks like coarse crumbs.
    4. Stir in the raisins.
    5. Add milk + vanilla and mix just until a soft, slightly sticky dough forms. Don’t overmix.
    6. Put dough on a floured surface and gently flatten to about 2–3 cm thick.
    7. Cut into 8–10 rough pieces. Don’t worry about making them perfectly shaped—the rustic look in your photo is perfect.
    8. Place on tray, brush tops with beaten egg.
    9. Bake 15–20 minutes, until golden brown.
    10. Cool for 5–10 minutes and serve warm with butter.
    Tip: For extra-soft scones, don’t add too much flour while shaping. The dough should remain a little sticky.
