Ingredients
- 2 cups complete buttermilk pancake mix
- 1½ cups milk (or as directed on the pancake mix)
- 2 eggs
- 2 tbsp melted butter
- 1 tsp vanilla extract (optional)
- 1½ cups cooked breakfast sausage, crumbled
- Maple syrup, for serving
- Cooking spray, for the pan
Instructions
- Cook the sausage: Brown the breakfast sausage in a skillet over medium heat. Break it into small crumbles, cook thoroughly, and drain excess grease.
- Prepare the batter: In a bowl, whisk together the pancake mix, milk, eggs, melted butter, and vanilla until just combined. Avoid overmixing.
- Preheat the pan: Heat a mini pancake maker or mini muffin-style pancake pan and lightly coat it with cooking spray.
- Fill the molds: Spoon a little cooked sausage into each mold, then pour pancake batter over it until about three-quarters full.
- Cook until golden: Close the pancake maker and cook for 3–5 minutes, or until the bites are golden brown and cooked through. Cooking time depends on your appliance.
- Serve: Remove carefully and serve warm with maple syrup for dipping or drizzling.
Tips
- Add shredded cheddar cheese for a cheesy variation.
- Use fully cooked sausage to save time.
- For oven baking, use a greased mini muffin pan at 375°F (190°C) for about 12–16 minutes, checking that the centers are fully cooked.
Enjoy! These fluffy, golden pancake bites combine savory breakfast sausage with sweet maple syrup, making them perfect for breakfast, brunch, or a quick snack.
