👨‍🍳 Step-by-Step Instructions

Step 1: Prepare Matcha Mixture

  1. In a small bowl, add matcha powder.
  2. Add 2–3 tablespoons of warm milk and whisk until smooth (no lumps).
  3. Set aside.

Step 2: Heat Milk & Cream

  1. In a saucepan, combine:
    • Milk
    • Half of the sugar
    • A pinch of salt
  2. Heat on medium until it’s warm (not boiling).

Step 3: Whisk Egg Yolks

  1. In another bowl, whisk egg yolks with remaining sugar.
  2. Beat until the mixture becomes pale and slightly thick.

Step 4: Temper the Eggs

  1. Slowly pour the warm milk mixture into the egg yolks while whisking constantly.
  2. This prevents scrambling.

Step 5: Cook the Custard

  1. Pour the mixture back into the saucepan.
  2. Cook on low heat, stirring constantly.
  3. Cook until it thickens enough to coat the back of a spoon (about 75–80°C).

Step 6: Add Matcha

  1. Remove from heat.
  2. Add the prepared matcha paste.
  3. Mix well until smooth and evenly green.

Step 7: Add Cream & Chill

  1. Stir in the heavy cream.
  2. Add vanilla extract (optional).
  3. Strain through a sieve for extra smooth texture.
  4. Cover and refrigerate for at least 4–6 hours (or overnight).

Step 8: Churn the Ice Cream

  1. Pour chilled mixture into an ice cream maker.
  2. Churn according to machine instructions (usually 20–25 minutes).

Step 9: Freeze

  1. Transfer to a container.
  2. Freeze for 3–4 hours until firm.

🍨 Without Ice Cream Maker (Alternative Method)

  1. Pour mixture into a shallow container.
  2. Freeze for 1 hour.
  3. Take out and whisk or blend to break ice crystals.
  4. Repeat every 30 minutes for 3–4 times.
  5. Freeze until firm.
