Ingredients:

  • 1 cup cooked lentils
  • 1 medium potato, boiled and mashed
  • 1 medium carrot, grated
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup breadcrumbs
  • 2 tbsp vegetable oil, for frying

Instructions:

  1. In a mixing bowl, combine cooked  lentils, mashed  potato, grated carrot, chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, salt, and black pepper. Mix well.
  2. Add breadcrumbs to the mixture and stir until well combined. The mixture should be thick enough to form patties.
  3. Form the mixture into patties of your desired size and shape.
  4. Heat vegetable oil in a non-stick skillet over medium-high heat.
  5. Place the patties in the skillet and cook for 3-4 minutes per side, or until golden brown and crispy.
  6. Remove the patties from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
  7. Serve the lentil potato and carrot patties hot with your favorite dipping sauce or as a burger patty with your favorite toppings.
