Ingredients:
- 1 cup cooked lentils
- 1 medium potato, boiled and mashed
- 1 medium carrot, grated
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup breadcrumbs
- 2 tbsp vegetable oil, for frying
Instructions:
- In a mixing bowl, combine cooked lentils, mashed potato, grated carrot, chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, salt, and black pepper. Mix well.
- Add breadcrumbs to the mixture and stir until well combined. The mixture should be thick enough to form patties.
- Form the mixture into patties of your desired size and shape.
- Heat vegetable oil in a non-stick skillet over medium-high heat.
- Place the patties in the skillet and cook for 3-4 minutes per side, or until golden brown and crispy.
- Remove the patties from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
- Serve the lentil potato and carrot patties hot with your favorite dipping sauce or as a burger patty with your favorite toppings.
