Description:

Keto Zuppa Toscana is a hearty, comforting soup made with Italian sausage, bacon, garlic, and kale in a rich, creamy broth. It swaps out potatoes for cauliflower to keep it low-carb but still packed with flavor. It’s an ideal choice for a cozy keto meal.

Ingredients:

  • 1 lb Italian sausage (mild or spicy, based on preference)
  • 4 slices bacon, chopped
  • 4 cups cauliflower florets (small bite-sized pieces)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth (low sodium)
  • 2 cups kale or spinach, chopped
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1/4 tsp crushed red pepper flakes (optional for heat)

Instructions:

  1. Cook the Bacon and Sausage: In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove bacon from the pot and set aside on a paper towel to drain. Leave about 1-2 tablespoons of bacon grease in the pot.
  2. Add Sausage: Add the Italian sausage to the pot and cook until browned, breaking it into small pieces with a spoon as it cooks. Once browned, remove the sausage and set aside with the bacon.
  3. Sauté Onion and Garlic: In the same pot, add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Add Cauliflower and Broth: Add the cauliflower florets to the pot, followed by the chicken broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10-12 minutes, or until the cauliflower is tender.
  5. Add Kale and Cream: Stir in the chopped kale (or spinach) and heavy cream. Let it simmer for an additional 5 minutes until the greens are wilted and the soup is heated through.
  6. Season and Serve: Return the cooked sausage and bacon to the pot. Season with salt, pepper, and red pepper flakes if desired. Serve hot, garnished with extra bacon bits or a sprinkle of cheese if desired.
