Ingredients:

  • 4 medium zucchinis
  • 1 pound ground beef
  • 1 cup tomato sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds with a spoon to create a hollow cavity in each half. Place the zucchini halves in a large baking dish.
  3. Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up into small pieces as it cooks.
