Keto Pecan Pie Mug Cake!!
Mix in mug:
2 T. coconut flour
2 T. almond flour
2 T. Swerve brown sugar
1 egg
1 T. unsweetened almond milk
1 T. melted butter
1/2 tsp. baking powder
1/2 tsp. sugar-free vanilla extract
1/6 tsp Salt
Pecan Pie Topping:
2 oz pecans, roughly chopped
2 T. brown sugar swerve
4 T. butter
1 tsp vanilla extract

Pecan Pie Mug Cake:

  1. Add all of the ingredients for the mug cake base into a middle-sized bowl.
  2. Whisk until you get a smooth and chunk-free dough.
  3. Grease your microwave-safe mug or ramekin with cooking oil that doesn’t have a strong taste (I like to use coconut oil, butter or avocado oil).
  4. Add your cake batter into your mug or ramekin (the mug should be at least double the size of the mixed ingredients).
  5. Microwave for about 1-3 minutes ( 1 Minute at 1200 Watt and more like 2-3 minutes at <600 Watt.)
  6. You can test if your mug cake is completely cooked by pricking the center with a toothpick – if it comes out “clean” it’s ready!
    Pecan Pie Topping:
    Melt butter then combine pecans and brown sugar alternative.
    Once your mug cake is done, top with the pecan pie topping & enjoy!
