These Keto Nachos are a low-carb twist on a classic favorite. Crispy cheese chips are loaded with seasoned ground beef, melted cheese, and all your favorite nacho toppings, making them perfect for keto dieters who crave a flavorful, crunchy snack.
Ingredients:
- For the Nacho Chips:
- 2 cups shredded cheddar cheese
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- For the Toppings:
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup diced tomatoes
- 1/4 cup sliced jalapeños
- 1/4 cup sliced black olives
- 1/4 cup sour cream (optional)
- 1/4 cup guacamole (optional)
- Fresh cilantro for garnish
Instructions:
- Make the Keto Nacho Chips:
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Mix shredded cheddar cheese with chili powder and garlic powder in a bowl.
- Spoon small mounds of the cheese mixture onto the baking sheet, flattening each one slightly into a circle.
- Bake for 6-8 minutes until the edges are golden and crispy. Remove from the oven and let them cool to firm up.
- Prepare the Ground Beef:
- In a skillet over medium heat, add olive oil and cook the ground beef until browned, breaking it apart as it cooks.
- Add cumin, paprika, onion powder, salt, and pepper. Stir well and cook for another 2-3 minutes. Remove from heat.
- Assemble the Nachos:
- Arrange the keto nacho chips on a large plate or baking tray.
- Top with the seasoned ground beef and sprinkle shredded cheese over the top.
- If desired, place the nachos back in the oven for a few minutes to melt the cheese.
- Add Toppings:
- Finish with diced tomatoes, jalapeños, black olives, and any optional toppings like sour cream, guacamole, and fresh cilantro.
