These Keto Nachos are a low-carb twist on a classic favorite. Crispy cheese chips are loaded with seasoned ground beef, melted cheese, and all your favorite nacho toppings, making them perfect for keto dieters who crave a flavorful, crunchy snack.


Ingredients:

  • For the Nacho Chips:
    • 2 cups shredded cheddar cheese
    • 1/2 teaspoon chili powder
    • 1/2 teaspoon garlic powder
  • For the Toppings:
    • 1 lb ground beef
    • 1 tablespoon olive oil
    • 1 teaspoon cumin
    • 1 teaspoon paprika
    • 1/2 teaspoon onion powder
    • Salt and pepper to taste
    • 1 cup shredded cheese (cheddar or Mexican blend)
    • 1/4 cup diced tomatoes
    • 1/4 cup sliced jalapeños
    • 1/4 cup sliced black olives
    • 1/4 cup sour cream (optional)
    • 1/4 cup guacamole (optional)
    • Fresh cilantro for garnish

Instructions:

  1. Make the Keto Nacho Chips:
    • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
    • Mix shredded cheddar cheese with chili powder and garlic powder in a bowl.
    • Spoon small mounds of the cheese mixture onto the baking sheet, flattening each one slightly into a circle.
    • Bake for 6-8 minutes until the edges are golden and crispy. Remove from the oven and let them cool to firm up.
  2. Prepare the Ground Beef:
    • In a skillet over medium heat, add olive oil and cook the ground beef until browned, breaking it apart as it cooks.
    • Add cumin, paprika, onion powder, salt, and pepper. Stir well and cook for another 2-3 minutes. Remove from heat.
  3. Assemble the Nachos:
    • Arrange the keto nacho chips on a large plate or baking tray.
    • Top with the seasoned ground beef and sprinkle shredded cheese over the top.
    • If desired, place the nachos back in the oven for a few minutes to melt the cheese.
  4. Add Toppings:
    • Finish with diced tomatoes, jalapeños, black olives, and any optional toppings like sour cream, guacamole, and fresh cilantro.
