Ingredients:

  • 1 1/2 lbs  beef stew  meat (or sirloin, cut into bite-sized pieces)
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup mushrooms, sliced (button or cremini)
  • 1 cup beef broth (ensure it’s low-carb or no-added-sugar)
  • 1/2 cup heavy cream
  • 2 tbsp Worcestershire sauce (check for low-carb versions or omit if needed)
  • 2 tbsp Dijon mustard
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 tbsp cornstarch or keto-friendly thickener (optional, for thicker sauce)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Sear the Beef: Set your Instant Pot to “Sauté” mode. Add olive oil and allow it to heat. Add the beef stew meat in batches (don’t overcrowd) and sear until browned on all sides. Remove beef and set aside.
  2. Cook Aromatics: In the same pot, add chopped onion and cook until translucent, about 3-4 minutes. Add minced garlic and cook for an additional 30 seconds until fragrant.
  3. Add Mushrooms: Add sliced mushrooms to the pot and cook until they start to brown, about 4 minutes.
  4. Deglaze the Pot: Pour in a bit of beef broth and scrape the bottom of the pot to release any browned bits (this adds flavor).
  5. Pressure Cook: Return the seared beef to the pot. Add the remaining beef broth, Worcestershire sauce, Dijon mustard, and dried thyme. Stir to combine. Close the lid, set the valve to “Sealing,” and cook on “Manual” or “Pressure Cook” for 25 minutes.
  6. Release Pressure: When the cooking time is up, allow the pressure to release naturally for about 10 minutes, then carefully do a quick release for any remaining pressure.
  7. Make the Sauce: Open the lid and stir in the heavy cream. If you want a thicker sauce, mix 1 tbsp of cornstarch with 1 tbsp of cold water to create a slurry and stir it into the pot. Cook on “Sauté” mode for a few minutes until the sauce thickens to your liking.
  8. Season and Serve: Adjust seasoning with salt and pepper to taste. Garnish with chopped fresh parsley if desired.

  • You can serve this over zucchini noodles, cauliflower rice, or even just enjoy it as is for a low-carb option.
  • For extra flavor, consider adding a splash of dry white wine (if it fits your keto plan) or a bit of paprika.
