Description
These Keto Crepes are a perfect low-carb alternative to traditional crepes, offering a delicate, thin texture with a hint of sweetness. Ideal for breakfast or dessert, they pair beautifully with berries, sugar-free syrup, or even a savory filling. They’re quick to make, gluten-free, and will satisfy your craving for something light yet indulgent.
Ingredients
- 4 large eggs
- 4 oz cream cheese (softened)
- 1 tbsp coconut flour
- 1 tbsp melted butter
- 1 tsp vanilla extract
- 1 tbsp powdered erythritol (or any keto-friendly sweetener)
- A pinch of salt
- Cooking spray or butter (for cooking)
Instructions
- Blend the Batter: In a blender, add the eggs, cream cheese, coconut flour, melted butter, vanilla extract, sweetener, and salt. Blend until smooth and lump-free. Let the batter sit for 5 minutes to allow the coconut flour to absorb the liquid.
- Heat the Pan: Lightly spray a non-stick skillet or crepe pan with cooking spray or butter. Heat it over medium heat.
- Cook the Crepes: Pour about 2-3 tablespoons of batter into the pan and swirl it around to cover the bottom evenly. Cook for 1-2 minutes until the edges start to lift. Flip carefully and cook for another 1-2 minutes. Repeat with the remaining batter.
- Serve: Serve the crepes warm with your favorite low-carb toppings like berries, whipped cream, or sugar-free chocolate sauce.
