Ingredients:
For the Crust:
- 1 ½ cups almond flour
- 1/4 cup powdered erythritol (or preferred keto-friendly sweetener)
- 1/3 cup butter, melted
- 1 teaspoon vanilla extract
For the Filling:
- 24 oz (680g) cream cheese, softened
- 3/4 cup powdered erythritol
- 3 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
Instructions:
- Preheat Oven: Preheat your oven to 325°F (160°C).
- Make the Crust: In a mixing bowl, combine almond flour, powdered erythritol, melted butter, and vanilla extract. Press the mixture into the bottom of a greased 9-inch (23cm) springform pan. Bake for 12-15 minutes or until lightly golden. Remove from the oven and let it cool while preparing the filling.
- Make the Filling:
- In a large bowl, beat the cream cheese and powdered erythritol until smooth and creamy.
- Add eggs, one at a time, mixing well after each addition.
- Mix in vanilla extract and sour cream until fully combined and smooth.
- Assemble and Bake:
- Pour the filling over the cooled crust.
- Smooth out the top with a spatula.
- Place the springform pan on a baking sheet (to catch any potential leaks) and bake for 45-50 minutes, or until the edges are set and the center is slightly jiggly.
- Cool and Chill:
- Turn off the oven and crack the oven door open. Let the cheesecake cool in the oven for 1 hour.
- Remove from the oven and let it cool completely at room temperature.
- Chill the cheesecake in the refrigerator for at least 4 hours or preferably overnight.
- Serve:
- Once chilled and set, remove the cheesecake from the springform pan.
