Best Ever Low Carb Cheesecake


This keto-friendly cheesecake is creamy, rich, and satisfying, with a buttery almond flour crust. It’s the perfect low-carb dessert for those following a ketogenic diet.


For the Crust:

  • 1 ½ cups almond flour
  • 1/4 cup powdered erythritol (or preferred keto-friendly sweetener)
  • 1/3 cup butter, melted
  • 1 teaspoon vanilla extract

For the Filling:

  • 24 oz (680g) cream cheese, softened
  • 3/4 cup powdered erythritol
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream


  1. Preheat Oven: Preheat your oven to 325°F (160°C).
  2. Make the Crust: In a mixing bowl, combine almond flour, powdered erythritol, melted butter, and vanilla extract. Press the mixture into the bottom of a greased 9-inch (23cm) springform pan. Bake for 12-15 minutes or until lightly golden. Remove from the oven and let it cool while preparing the filling.
  3. Make the Filling:
    • In a large bowl, beat the cream cheese and powdered erythritol until smooth and creamy.
    • Add eggs, one at a time, mixing well after each addition.
    • Mix in vanilla extract and sour cream until fully combined and smooth.
  4. Assemble and Bake:
    • Pour the filling over the cooled crust.
    • Smooth out the top with a spatula.
    • Place the springform pan on a baking sheet (to catch any potential leaks) and bake for 45-50 minutes, or until the edges are set and the center is slightly jiggly.
  5. Cool and Chill:
    • Turn off the oven and crack the oven door open. Let the cheesecake cool in the oven for 1 hour.
    • Remove from the oven and let it cool completely at room temperature.
    • Chill the cheesecake in the refrigerator for at least 4 hours or preferably overnight.
  6. Serve:
    • Once chilled and set, remove the cheesecake from the springform pan.
    • Slice and serve chilled. Optionally, top with fresh berries or a sugar-free fruit compote.
