  • 1 cup soy milk (or any plant-based milk)

  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and lightly grease a cake pan.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, combine the soy milk, vegetable oil, apple cider vinegar, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Pour the batter into the greased cake pan and smooth the top with a spatula.
