Ingredients

  • 3 cups (375 g) all-purpose or bread flour
  • 1½ cups (360 ml) warm water
  • 1½ tsp salt
  • 1 tsp instant yeast
  • 1 tsp sugar
  • 1 tbsp olive oil

Instructions

  1. Mix the dough: In a large bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes. Add flour, salt, and olive oil. Mix until a sticky dough forms.
  2. First rise: Cover the bowl and let the dough rise in a warm place for 1½–2 hours, or until doubled in size.
  3. Shape: Transfer the dough to a lightly floured surface. Gently shape it into a round loaf without overworking it.
  4. Second rise: Place on parchment paper, cover, and let rest for 30–45 minutes.
  5. Score: Make 2–3 shallow cuts across the top with a sharp knife.
  6. Bake: Preheat oven to 450°F (230°C). Place the dough in a covered Dutch oven or oven-safe pot and bake for 25 minutes covered.
  7. Remove the lid and bake another 15–20 minutes, until deeply golden brown.
  8. Cool: Transfer to a rack and cool for at least 30–45 minutes before slicing.
