Instructions

1️⃣ Prep & Preheat

  • Preheat oven to 350°F (175°C).
  • Grease or line a loaf pan (9×5″).

2️⃣ Mix the Wet

In a large bowl:

  • Beat eggs, oil, vanilla, and Greek yogurt.
  • Stir in crushed pineapple (with excess liquid drained but not bone-dry).

3️⃣ Combine the Dry

In another bowl:

  • Whisk flour, baking powder, baking soda, and salt.

4️⃣ Make the Batter

  • Gradually mix dry ingredients into wet.
  • Don’t overmix — just until combined.
  • Batter will be thick and chunky (pineapple does that!).

5️⃣ Bake

  • Pour batter into prepared loaf pan.
  • Bake 45–55 minutes or until toothpick comes out clean.
  • Cover with foil last 10 minutes if browning too fast.

6️⃣ Cool & Glaze

  • Let loaf cool at least 20–30 minutes.
  • Mix glaze: stir powdered sugar with pineapple juice until pourable.
  • Drizzle over cooled loaf. Let set 10 minutes.

Make It High-Protein

Replace ½ cup flour with:

  • ½ cup vanilla or unflavored whey protein powder
  • Increase yogurt to ⅔ cup to balance moisture
  • Reduce sugar slightly (protein powder may sweeten)

Result? A sweet treat with 10–12g protein per slice and zero guilt.
