Ingredients
- 2 large sweet potatoes, sliced into rounds
- 3 medium potatoes, sliced into rounds
- 2 carrots, sliced diagonally
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- ½ tsp paprika
- ½ tsp black pepper
- 1 tsp salt
- 2 tbsp maple syrup or honey
- ⅓ cup dried cranberries
- Fresh rosemary and thyme, for garnish
Instructions
- Preheat oven: 400°F (200°C). Grease a large baking dish.
- Season vegetables: Toss sweet potatoes, potatoes, and carrots with olive oil, garlic, thyme, rosemary, paprika, salt, and pepper.
- Arrange: Place the slices upright in rows, alternating the vegetables.
- Add glaze: Drizzle maple syrup or honey over the top.
- Bake: Cover loosely with foil and bake for 30 minutes.
- Remove foil and bake another 20–25 minutes, until golden and tender.
- Sprinkle with dried cranberries during the last 5–10 minutes.
- Garnish with fresh rosemary and thyme. Serve warm.
