Spinach and Sausage Lasagna with Lemon Thyme Honey Mustard

Ingredients:

For the Lasagna:

  • 9 lasagna noodles
  • 1 pound Italian sausage, casings removed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 (28-ounce) can crushed tomatoes
  • 1 (14-ounce) can diced tomatoes
  • 2 cups fresh spinach, chopped
  • 15 ounces ricotta cheese
  • 1 egg
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 3 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese

For the Lemon Thyme Honey Mustard:

  • 1/2 cup Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions:

Lasagna:

  1. Cook the lasagna noodles according to package instructions. Drain and set aside.
  2. In a large skillet, cook the Italian sausage over medium heat until browned. Add chopped onion and garlic, sautéing until the onion is translucent.
  3. Stir in the crushed tomatoes and diced tomatoes. Bring to a simmer, then add the chopped spinach and cook until wilted. Season with salt, pepper, dried oregano, and dried basil.
  4. In a separate bowl, mix the ricotta cheese with an egg, salt, and pepper.
  5. Preheat the oven to 375°F (190°C).
  6. In a 9×13-inch baking dish, spread a thin layer of the tomato and sausage mixture. Place three lasagna noodles on top, followed by a layer of ricotta mixture, and a sprinkle of mozzarella and Parmesan cheese. Repeat the layers, finishing with a layer of cheese on top.
  7. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.

Lemon Thyme Honey Mustard:

  1. In a small bowl, whisk together Dijon mustard, honey, fresh lemon juice, and chopped thyme.
  2. Season with salt and pepper to taste. Adjust the sweetness or tanginess by adding more honey or lemon juice if desired.
