Spinach and Sausage Lasagna with Lemon Thyme Honey Mustard
Ingredients:
For the Lasagna:
- 9 lasagna noodles
- 1 pound Italian sausage, casings removed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 (28-ounce) can crushed tomatoes
- 1 (14-ounce) can diced tomatoes
- 2 cups fresh spinach, chopped
- 15 ounces ricotta cheese
- 1 egg
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 3 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
For the Lemon Thyme Honey Mustard:
- 1/2 cup Dijon mustard
- 2 tablespoons honey
- 1 tablespoon fresh lemon juice
- 1 teaspoon fresh thyme, chopped
- Salt and pepper to taste
Instructions:
Lasagna:
- Cook the lasagna noodles according to package instructions. Drain and set aside.
- In a large skillet, cook the Italian sausage over medium heat until browned. Add chopped onion and garlic, sautéing until the onion is translucent.
- Stir in the crushed tomatoes and diced tomatoes. Bring to a simmer, then add the chopped spinach and cook until wilted. Season with salt, pepper, dried oregano, and dried basil.
- In a separate bowl, mix the ricotta cheese with an egg, salt, and pepper.
- Preheat the oven to 375°F (190°C).
- In a 9×13-inch baking dish, spread a thin layer of the tomato and sausage mixture. Place three lasagna noodles on top, followed by a layer of ricotta mixture, and a sprinkle of mozzarella and Parmesan cheese. Repeat the layers, finishing with a layer of cheese on top.
- Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
Lemon Thyme Honey Mustard:
- In a small bowl, whisk together Dijon mustard, honey, fresh lemon juice, and chopped thyme.
- Season with salt and pepper to taste. Adjust the sweetness or tanginess by adding more honey or lemon juice if desired.
