1½ lb (680 g) chicken thighs or breasts
3 tbsp olive oil
3 tbsp lemon juice
3 cloves garlic, minced
1 tsp dried oregano
½ tsp paprika
½ tsp cumin (optional)
¾ tsp salt
½ tsp black pepper
🔸 Cucumber Tzatziki
1 cup Greek yogurt (full-fat for best flavor)
½ cup grated cucumber, seeds removed & squeezed dry
1 tbsp olive oil
1 tbsp lemon juice or vinegar
1 clove garlic, finely grated
Salt to taste
Fresh dill or mint (optional)

Pita bread or flatbreads
Sliced tomatoes
Red onion slices
Lettuce or cabbage

👩‍🍳 Instructions
1️⃣ Marinate the chicken

Mix olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper.
Coat chicken and marinate 30 minutes to overnight.
2️⃣ Cook the chicken

Grill, pan-sear, or roast at 425°F (220°C) for 12–15 minutes, flipping once.
Rest 5 minutes, then slice thinly.
3️⃣ Make tzatziki

Combine Greek yogurt, cucumber, olive oil, lemon juice, garlic, salt, and herbs.
Chill 10 minutes for best flavor.
4️⃣ Assemble gyros

Warm pita.
Add chicken, veggies, and generous tzatziki.
Sprinkle with feta if desired.
