Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • Salt and pepper
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1/2 cup chicken broth
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon butter
  • 1/4 cup heavy cream
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 375°F.
  2. Season the chicken thighs generously with salt and pepper.
  3. Heat the olive oil in an oven-safe skillet over medium-high heat. When the oil is hot, add the chicken thighs skin-side down and cook for 5-6 minutes until golden brown.
  4. Flip the chicken thighs over and cook for another 2-3 minutes.
  5. Remove the chicken from the skillet and set it aside.
  6. Add the garlic and mushrooms to the same skillet and sauté for 2-3 minutes until the mushrooms are tender.
  7. Pour in the chicken broth and add the fresh thyme. Stir to combine.
  8. Add the chicken back to the skillet, skin-side up. Place the skillet in the oven and bake for 20-25 minutes until the chicken is cooked through and the skin is crispy.
  9. Remove the skillet from the oven and stir in the butter until it’s melted.
  10. Add the heavy cream to the skillet and stir to combine. Simmer the sauce for a few minutes until it thickens.
  11. Garnish with chopped parsley and serve hot.
