1. Ingredients
    • 3 cups all-purpose flour
    • 1½ tsp instant yeast
    • 1½ tsp salt
    • 1¼ cups warm water
    • 2 tbsp olive oil
    • 3 garlic cloves, finely chopped
    • 1 tbsp dried rosemary or thyme
    • ½ small onion, finely chopped
    • 1 tbsp melted butter
    • Fresh rosemary, for topping
    Method
    1. Mix flour, yeast, salt, garlic, herbs, and onion.
    2. Add warm water and olive oil. Mix into a soft, slightly sticky dough.
    3. Cover and let rise for 1–1½ hours, until doubled.
    4. Shape into a round/oval loaf and place on parchment. Rest 30 minutes.
    5. Brush with melted butter and sprinkle with herbs.
    6. Score the top with a sharp knife.
    7. Bake at 220°C (425°F) for 25–30 minutes, until deeply golden.
    8. Cool for 15 minutes before slicing.
    Tip: For an extra-crispy crust, place a small oven-safe dish of hot water in the oven while baking.
