Ingredients
For the Cheesecake
- 8 oz (225 g) cream cheese, softened
- ½ cup (120 ml) whole milk
- ¼ cup (55 g) unsalted butter
- 6 large eggs, separated
- ½ cup (100 g) granulated sugar
- ¾ cup (95 g) cake flour
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- ¼ teaspoon salt
For the Pan
- 1 tablespoon butter
- Parchment paper
For Finishing
- Powdered sugar, for dusting
- Fresh strawberries or berries, optional
👩🍳 Instructions
1. Prepare the Pan
Preheat your oven to 320°F (160°C).
Line the bottom and sides of an 8-inch round springform or deep cake pan with parchment paper.
Lightly grease the parchment with butter.
If using a springform pan, wrap the outside bottom with aluminum foil to prevent water from entering during the water bath.
2. Make the Cream Cheese Mixture
Place the cream cheese, milk, and butter in a heatproof bowl.
Set the bowl over a pot of gently simmering water and stir until everything is completely melted and smooth.
Remove from the heat.
Allow the mixture to cool slightly.
Add the egg yolks one at a time, whisking gently after each addition.
Add the vanilla extract and lemon juice.
3. Add the Dry Ingredients
Sift the cake flour, cornstarch, and salt into the cream cheese mixture.
Whisk gently until the batter becomes smooth.
Do not overmix.
The finished batter should be creamy, smooth, and pourable.
4. Whip the Egg Whites
Place the egg whites in a completely clean mixing bowl.
Begin beating at medium speed.
Gradually add the sugar while continuing to beat.
Whip until you achieve soft to medium peaks.
The meringue should be glossy and hold its shape, but it should not be extremely stiff or dry.
This step is what gives the cheesecake its signature fluffy, airy texture.
5. Combine the Batter
Add about one-third of the whipped egg whites to the cream cheese mixture.
Gently fold using a spatula.
Add another third and fold again.
Finally, add the remaining egg whites.
Fold very gently until no large streaks of egg white remain.
Avoid vigorous stirring because you don’t want to lose the air incorporated into the meringue.
6. Pour Into the Pan
Pour the batter into the prepared cake pan.
Gently tap the pan against the countertop once or twice to remove large air bubbles.
Place the cake pan inside a larger roasting pan.
Pour hot water into the roasting pan until it reaches approximately 1 inch up the side of the cake pan.
This water bath helps the cheesecake bake gently and prevents the delicate surface from drying out.
7. Bake
Place the cake in the preheated oven.
Bake at 320°F (160°C) for approximately 25 minutes.
Then reduce the temperature to 285°F (140°C) and continue baking for another 45–55 minutes.
The top should become beautifully golden and the cake should feel lightly springy when gently touched.
8. Cool the Cheesecake Slowly
Turn off the oven and leave the cheesecake inside with the oven door slightly open for about 15–20 minutes.
This gradual cooling helps reduce the chance of the cake collapsing suddenly.
Remove the cheesecake from the water bath.
Allow it to cool completely before removing it from the pan.
9. Finish and Serve
Carefully remove the parchment paper.
Place the cheesecake on a serving plate.
Dust the top lightly with powdered sugar.
For a fresh presentation, serve with strawberries, raspberries, blueberries, or a small amount of whipped cream.
