Instructions:

  2. In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
  3. Add the diced onion, minced garlic, and diced bell pepper to the skillet. Cook for about 5 minutes, until the vegetables are softened.
  4. Stir in the black beans, corn kernels, enchilada sauce, diced green chilies, chili powder, cumin, salt, and pepper. Simmer the mixture for about 5 minutes, allowing the flavors to blend.
  5. Arrange a layer of corn tortillas on the bottom of the greased baking dish, tearing them if necessary to fit.
  6. Spread half of the beef and vegetable mixture over the tortillas, followed by half of the shredded cheddar cheese.
  7. Repeat the layers with another layer of tortillas, the remaining beef and vegetable mixture, and the remaining cheese.
  8. Cover the casserole with aluminum foil and bake in the preheated oven for 20 minutes.
  9. Remove the foil and continue baking for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let it cool for a few minutes. Serve with optional toppings if desired.
