Main Ingredients:
- 3 large potatoes (peeled & grated)
- 1 small onion (finely chopped)
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 eggs
- 3β4 tablespoons all-purpose flour
- 2 tablespoons cornflour (for extra crispiness)
- 2β3 tablespoons chopped fresh parsley or coriander
- 2 cloves garlic (minced)
Seasoning:
- 1 teaspoon salt (adjust to taste)
- Β½ teaspoon black pepper
- Β½ teaspoon red chili flakes (optional)
- Β½ teaspoon paprika (optional)

- Oil (for shallow frying)

Step 1: Prepare the Potatoes
- Peel and grate the potatoes using a grater.
- Place grated potatoes in a clean cloth and squeeze out all excess water (VERY IMPORTANT).
- Transfer to a large mixing bowl.
Step 2: Make the Batter
- Add chopped onion, garlic, and herbs into the potatoes.
- Add cheese and mix well.
- Crack in the eggs and mix again.
- Add flour and cornflour.
- Add all seasoning (salt, pepper, chili flakes, paprika).
- Mix everything until a thick batter forms.
π The mixture should hold together (not watery).
Step 3: Shape the Pancakes
- Take a handful of mixture.
- Flatten it into a round patty (like a small pancake).
- Repeat for all mixture.
Step 4: Fry the Pancakes
- Heat oil in a frying pan over medium heat.
- Place pancakes gently into the pan.
- Fry for 3β4 minutes on each side until golden brown and crispy.
- Do not overcrowd the pan.

Step 5: Drain & Serve
- Remove and place on paper towels to remove excess oil.
- Serve hot.

- Always squeeze water from potatoes β ensures crispiness
- Use medium heat β high heat will burn outside, raw inside
- Add more flour if mixture is too soft
- For extra crunch β add a little semolina (sooji)
