  • 2 lbs chicken tenders (or chicken breast cut into strips)
  • 1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar)
  • 1 large egg
  • 1 ½ cups flour
  • ½ cup cornstarch (key for extra crisp!)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp cayenne (optional, for heat)
  • Oil for frying (peanut or vegetable oil)

🔥 Instructions

1️⃣ Marinate

  • Whisk buttermilk and egg.
  • Add chicken and marinate at least 30 minutes (or up to 4 hours in fridge).

2️⃣ Breading Mix

  • Combine flour, cornstarch, and all seasonings in a shallow bowl.

3️⃣ Coat for EXTRA Crunch

  • Remove chicken from marinade.
  • Press firmly into flour mixture.
  • For thicker crust: dip back into buttermilk, then coat again in flour.

4️⃣ Fry

  • Heat oil to 350°F (175°C).
  • Fry 3–5 minutes per side until golden brown and internal temp reaches 165°F.
  • Drain on wire rack (not paper towels — keeps them crispy).


🧀 KETO VERSION (Ultra Crispy!)

Replace flour + cornstarch with:

  • 1 cup crushed pork rinds
  • ½ cup grated parmesan
  • 2 tbsp almond flour

Follow same steps. Air fry at 400°F for 10–12 minutes or bake at 425°F for 18–22 minutes.
