Ingredients

Filling

  • 2 cups cooked rice
  • 250 g cooked minced beef or chicken
  • 1 small onion, finely chopped
  • 1 tsp garlic
  • ½ tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 tbsp tomato sauce
  • 1 cup shredded cheddar/mozzarella

For wrapping

  • 6 large flour tortillas
  • 2 tbsp butter or oil
  • ½ cup shredded cheese for the outside

Method

  1. Make filling: Fry onion and garlic in a little oil for 2 minutes. Add cooked meat, paprika, pepper, salt and tomato sauce. Cook for 3–4 minutes.
  2. Stir in the cooked rice and ½ cup cheese. Mix until combined.
  3. Place filling in the center of each tortilla. Fold the sides inward and roll tightly into a burrito.
  4. Heat a little butter/oil in a skillet over medium-low heat.
  5. Sprinkle a little cheese directly in the pan. Place the burrito seam-side down on the cheese.
  6. Cook for 2–3 minutes until the cheese becomes deep golden and crispy.
  7. Turn and cook the other sides until crisp and browned.
  8. Serve hot with cheese sauce or your favorite dipping sauce.
