Ingredients
- 4 slices soft bread or brioche
- 1 cup fresh pineapple, thinly sliced
- ½ cup cream cheese, softened
- 2 tbsp whipped cream or heavy cream
- 1 tbsp powdered sugar
- ½ tsp vanilla extract
- 1 tbsp shredded coconut, optional
- 1 tbsp butter, optional
Instructions
- Mix the softened cream cheese, whipped cream, powdered sugar, and vanilla until smooth and fluffy.
- Pat the pineapple slices dry with paper towels so they don’t make the bread soggy.
- Spread a thick layer of the cream cheese mixture over each slice of bread.
- Arrange a generous layer of pineapple over two slices.
- Add shredded coconut if desired.
- Place the remaining bread slices on top and gently press together.
- For a toasted version, lightly butter the outside and toast in a skillet over medium-low heat for 2–3 minutes per side. Otherwise, serve fresh.
- Chill for 10–15 minutes, then cut in half and serve.
Tip: Fresh pineapple gives the best flavor, but canned pineapple can be used if it is thoroughly drained and patted dry.
