Ingredients

  • 4 slices soft bread or brioche
  • 1 cup fresh pineapple, thinly sliced
  • ½ cup cream cheese, softened
  • 2 tbsp whipped cream or heavy cream
  • 1 tbsp powdered sugar
  • ½ tsp vanilla extract
  • 1 tbsp shredded coconut, optional
  • 1 tbsp butter, optional

Instructions

  1. Mix the softened cream cheese, whipped cream, powdered sugar, and vanilla until smooth and fluffy.
  2. Pat the pineapple slices dry with paper towels so they don’t make the bread soggy.
  3. Spread a thick layer of the cream cheese mixture over each slice of bread.
  4. Arrange a generous layer of pineapple over two slices.
  5. Add shredded coconut if desired.
  6. Place the remaining bread slices on top and gently press together.
  7. For a toasted version, lightly butter the outside and toast in a skillet over medium-low heat for 2–3 minutes per side. Otherwise, serve fresh.
  8. Chill for 10–15 minutes, then cut in half and serve.

Tip: Fresh pineapple gives the best flavor, but canned pineapple can be used if it is thoroughly drained and patted dry.
