INGREDIENTS

• 1 rotisserie chicken, shredded

• 2- 8 oz brick of cream cheese

• 2 cups shredded fiesta blend cheese

• 1 tsp salt

• 1/2 tsp onion powder

• 1/2 tsp garlic powder

• 1 tsp parsley

• 1 (1-oz) packet dry Hidden Valley Ranch seasoning packet

• ½ cup chopped cooked bacon

INSTRUCTIONS

1. Preheat oven to 375 degrees

2. Put small amount of olive oil in bottom of glass 9 x 11 baking dish

3. Place shredded chicken in baking dish evenly. Put 1/2 cup water to prevent chicken from drying out. (May also add 1/2 cup milk or heavy whipping cream if you prefer)

4. Sprinkle salt, onion powder, garlic powder and ranch seasoning over chicken.

5. Place softened cream cheese on top, covering entire casserole.

6. Sprinkle bacon and fiesta blend cheese on top

7. Bake for 30 minutes, or until heated through. I like to broil for the last couple of minutes to crisp up the cheese and then sprinkle with parsley and serve.

NOTES

• Do not make the ranch dressing. Use the mix dry.

• Can reduce the amount of Ranch dressing mix to your personal preference.

• Can also make without the bacon. Or double it, to suit your taste.
