Ingredients
For the eggs:
- 6 large eggs
- 3 tablespoons mayonnaise
- 1 teaspoon yellow mustard or Dijon mustard
- 1 teaspoon apple cider vinegar or lemon juice
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon smoked paprika
- Salt, to taste
- Black pepper, to taste
For the topping:
- 3–4 slices cooked crispy bacon, finely crumbled
- 1–2 tablespoons fresh chives, finely chopped
- ½ teaspoon paprika
- Fresh parsley, optional
👩🍳 Instructions
1. Boil the eggs
Place the eggs in a saucepan and cover them with cold water by about 1 inch. Bring the water to a full boil, then turn off the heat and cover the pan. Let the eggs sit for 10–12 minutes.
2. Cool the eggs
Transfer the eggs immediately to a bowl of ice water. Let them cool for at least 5 minutes. This stops the cooking process and makes them easier to peel.
3. Peel and cut
Carefully peel the eggs and rinse away any small pieces of shell. Slice each egg lengthwise.
4. Make the filling
Gently remove the yolks and place them in a bowl. Mash the yolks until smooth.
Add the mayonnaise, mustard, vinegar or lemon juice, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until the filling is smooth, creamy, and well combined.
If the mixture seems too thick, add another small spoonful of mayonnaise.
5. Fill the egg whites
Spoon the mixture into the empty egg-white halves. For a more attractive presentation, transfer the filling to a piping bag and pipe it into each egg.
6. Add the toppings
Sprinkle each deviled egg with a little paprika. Add crispy bacon crumbles and freshly chopped chives. A small amount of fresh parsley can also be added for color.
7. Chill and serve
Refrigerate the deviled eggs for 20–30 minutes before serving. They taste best chilled and freshly prepared.
⭐ Tips for the Best Deviled Eggs
- Use eggs that are several days old rather than extremely fresh eggs; they tend to peel more easily.
- Don’t overcook the eggs, as the yolks can become dry and develop a greenish ring.
- For an extra-smooth filling, mash the yolks very thoroughly or blend the mixture briefly.
- Add the bacon immediately before serving if you want it to remain especially crispy.
- For a little heat, add a pinch of cayenne pepper or a few drops of hot sauce.
