Ingredients
- 1½ cups creamy peanut butter
- ½ cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 2 cups chocolate chips or chocolate melting wafers
- 1 tbsp coconut oil or shortening (optional)
Instructions
- In a large bowl, beat the peanut butter and softened butter until smooth.
- Add powdered sugar and vanilla. Mix until a thick dough forms.
- Roll the mixture into small 1-inch balls and place on a parchment-lined tray.
- Refrigerate for 30–45 minutes until firm.
- Melt the chocolate with coconut oil in the microwave in 20–30 second intervals, stirring between each.
- Dip each peanut butter ball into the melted chocolate, coating completely.
- Place back on the parchment paper.
- Refrigerate for 20–30 minutes until the chocolate is set.
- Store in an airtight container in the refrigerator.
Makes: about 30–36 balls.
